- 2 cups uncooked brown rice
- 4 cups water
- 4 cans black beans
- 2 cans pinto beans
- 1 can whole kernel corn, drained
- 1 can diced tomatoes with green chiles
- 16 flour tortillas
- 1 pound shredded pepper Jack cheese
Instructions

Take a pan, add water and brown rice. Cook it on low heat until the rice becomes soft. Then let it cool.

Wash and drain the black beans and pinto beans properly.

In a big bowl, mix beans, corn, and tomatoes with green chilies.
