Ingredients

  • 1/3 cup coarsely chopped fresh mint
  • 3 tablespoons piri piri seasoning
  • 2 garlic cloves, crushed
  • 500 g chicken tenderloins
  • Olive oil, to grease
  • Low-fat natural yoghurt, to serve

Instructions

    In a large bowl, mix together mint, piri piri seasoning, and garlic. Add the chicken and stir well so it is fully coated.

    Put the chicken pieces onto skewers. Heat a large non-stick pan over medium-high heat and lightly grease it with oil. Place half of the skewers in the pan and cook for 3–4 minutes on each side, until they are golden and fully cooked. Move them to a plate and cover with foil to keep warm. Cook the remaining skewers in the same way.

    Place the cooked mint and piri piri chicken skewers on a serving plate. Serve right away with yogurt and a carrot and radish salad.
